CAPE COLLECTIVE STEMPEL SERIES CINSAUT
This 2018 Cinsaut originates from a bushvine vineyard planted in 1952 and is crafted by the renowned 'Cinsaut Whisperer,' Alex Milner of Natte Valleij.
The grapes were meticulously selected, ensuring optimal pH, acidity, and visual condition of the vineyard. Harvested from bushvines, they underwent a thorough destemming process. The open-top fermentation included regular punch downs, and the natural fermentation lasted for five days. Subsequently, the wine was gently pressed using a manual basket press. Following this, it matured for 11 months in 225L 3rd-fill barrels. The final product remains unfiltered, showcasing the authenticity of the winemaking process.
